I'd also strongly recommend the book "E Myth Contractor" which discusses systemetizing your business along the lines you are talking about. They also have a great website that may have some of what you want. Check it out…

We've used software from G Neil Company for writing employee manuals and like them. May not have specific job descriptions for you though. More generic than specific. Google them. Hope that helps.
